strawberry cupcake recipe

I have been craving a strawberry cupcake. And I wanted to make them from scratch.
So, obviously I consulted my girl, Jacqui (from Baby Boy Bakery) who I happened to share a bed with at Snap! a few weeks ago and she graciously gave me her super amazing recipe for delicious strawberry cupcakes.
Are you ready???
Cupcake Ingredients:
2 cups fresh hulled strawberries
1/2 cup whole milk
1 tsp vanilla
2 1/2 cups of sifted flour
2 tsp baking powder
1/4 tsp salt
3/4 cup softened butter
1 1/3 cup sugar
1 large egg & 2 egg whites
Cream Cheese Icing Ingredients:
1 lb (2 packages) cream cheese
1 stick of butter
5-6 cups of powdered sugar
1 tsp vanilla
1/4 cup of whipping cream
*set your oven at 325*
The Cupcakes:

I'm sure there is more of a science to this.... but for the cupcakes, I dumped all the ingredients into the bowl and turned on my mixer. (and, btw, they turned out delicious!!)

Bake them at 325* for 10 minutes, turn the pan around and bake them for another 10 minutes.

As the cupcakes are cooling, start on the icing.
The Icing:

again, I basically dumped everything (but the powdered sugar) into the bowl and turned on my mixer.
I added sugar slowly.
If its too runny, add more powdered sugar. If its too sticky, add more whipping cream.

In the latest issue of the Food Network Magazine (pg 88), there is an entire article on coloring your icing.
I went with "Pink Lemonade".

I added my icing to a zip-lock baggie and snipped one of the corners & applied the icing to the tops of my cupcakes.

add a strawberry garnish on top & you've got yourself a delicious and beautiful dessert!

  11. I didn't make the cupcakes, but I made the frosting (without the added color). Oh so gooood!!! No more store bought frosting for me.
